10-12 Pieces of Surmai/ Anjal/ King Fish,
5 Tablespoons of fresh Lemon Juice,
3 Tablespoons of Tamarind pulp extracted in water,
1/2 Teaspoon of Turmeric powder,
1/2 Teaspoon of coriander powder,
1/2 Teaspoon of cumin powder,
1 Tablespoon of Rice flour,
4-5 Tablespoons of Red Chili power,
Salt to taste,
Coconut Oil for shallow frying,
Coriander Leaves (handful fine chopped).
Procedure:
Take a mixing plate, add turmeric powder, coriander powder, cumin powder, rice flour, red chili powder, salt, lemon juice and tamarind pulp extracted water. Mix all the ingredients until the mixture become thick and smooth paste (if the mixture is too dry, then add fresh lemon juice accordingly). Apply the paste over each piece of fish in such a way that the fish is properly coated on all sides. Cover the marinated fish and keep it aside for nearly 1 hours.
Heat the non-stick fry pan on medium flame, add coconut oil. After the oil is heated, add 2-3 pieces of fish in to the pan in such way that the pieces don't stick to each other and also there are ample space for flipping each pieces. Reduce the heat to low and let the fish cook. The fish should not be fried until it is crispy. After 2-3 minutes, sprinkle finely chopped coriander leaves on the fish and flip them. Continue the same for the other side too. After 2-3 minutes, sprinkle finely chopped coriander leaves on the fish. Don't allow the outer coating to harden.
Transfer the fish to the serving plate and serve hot with rice and curry.
(Surmai is also known as Anjal in Mangalore is a good dietary source of Vitamin D.)
