Ingredients:
500 grms of Fresh Beetroot,
250 grms of White Sugar,
1/2 litres of Fresh Milk
(pre-cooked and brought to room temperature),
100 ml of Pure Ghee,
100grms of condensed milk,
1 teaspoon of Cardamom Powder,
Medium size chopped Cashew nuts and Almonds for Garnish.
Procedure:
Take a thick bottomed kadai or pan. Add ghee and grated beetroot in it. After About 5min add Milk..Mix and cook the grated beetroot and milk mixture on medium flame. The milk will boil and help the grated beetroot to cook . Do not leave the kadai\ pan unattended. When the milk is completely evaporated add sugar and condensed milk and stirr well. Sugar will release alot of moisture. Now cook until the moisture is completely evaporated. When it's completely evaporated you will notice that the beetroot s are completely cooked and the halwa turns aromatic and thickens. Now sprinkle cardamom powder as per your taste and requirement. Stirr and cook for 2-3min untill it blends Well.
Take a separate pan and roast the chopped cashew nuts and almonds (if needed add a tablespoon of pure ghee for roasting the cashew nuts and almonds). Take the beetroot halwa in the serving bowl and add the roasted cashew nuts and almonds. Refrigerate the halwa for 2 hours and serve the halwa chilled.
(Beetroots are a great source of fiber, folate (Vitamin B9), manganese, potassium, iron and Vitamin C)
